The word raclette is derived from the French word “racler”, meaning “to scrape”, as the  cheese traditionally was scraped from the heated half-wheel onto a plate.

The production of raclette cheese originated from the mountainous Swiss canton of Valais, where Alpine farmers and shepherds would eat the raclette cheese heated in front of the fire.

Today raclette is enjoyed at home and makes a very entertaining meal for family and friends. Portions of raclette cheese are heated on a tabletop raclette oven in individual trays and, when hot and bubbly, are scraped onto each plate over vegetables or meats.

The traditional manner to serve raclette is over small, firm boiled potatoes and served with pickled onions and gherkins.
